Dig into Europe’s finest mustard flour
There’s nothing like the taste of our Double Superfine mustard flour. It’s been at the heart of Colman’s mustard for more than 200 years.
Our mill is the only one in Europe that can produce mustard flour as finely as this - we sieve it more than 200 times! By doing so, we don’t just create a different texture, we give you a completely different taste-profile, level of heat delivery and pungency.
We are able to tightly control particle size through our milling process to get exactly the right taste and texture for you.
Choose your mustard: A tasting guide
If you want instant heat and zing in your nose with mustard aroma followed by a deep and rounded mustard flavour, then try our Brown Mustard Superfine Flour.
Do you want heat and pungency that builds slowly on the palate to an intensity typical of a hot English Mustard/Wasabi? Select our White Mustard Superfine Flour.
Alone or in combination the white and brown flours add protein, richness, creaminess and texture. They bind in moisture and act as a natural emulsifier.
Our whole and cracked seeds add mustard flavours with great visual appearance and texture to sauces, condiments, dressings, in bakery applications, pickles and more.
Mustard bran is a natural water binder and texturising ingredient adding savoury flavour and dietary fibre, useful in plant based formulations.

Mustard at a glance
- Many of our growers have been farming mustard for generations
- White mustard seed provides pungency
- Brown mustard seed provides heat
- Milling mustard releases the enzyme myrosinase which acts on the sinigrin and sinalbin contained in the whole grain, bringing them together, and releasing the heat
- The finer milled the mustard, the more pungent the flavour. This is how we achieve our unique smooth texture.
- White mustard seed is named Gedney and brown mustard seed is called Sutton
